Black Bean Burgers
Makes 10 (will freeze well for 1 month)

You will need:
Large baking sheet
Large mixing bowl
Potato masher, glass, or mug
Cutting board and knife
29 oz. canned black beans (or 2, 15 oz. cans)
4 slices whole wheat bread
¾ cups all purpose flour (regular or whole wheat)
1 ½ tsp salt, divided
1 tbs garlic powder (or 3 tbs minced garlic)
2 tsp smoked paprika
1 yellow onion
1 red, yellow or orange bell pepper
2 tsp oil plus more for greasing the pan
10 whole romaine lettuce leaves and 2 fresh tomatoes
Preheat oven to 375° F.
Foil a baking sheet and spray or wipe with oil
Strain and rinse the black beans
Tear the bread into bite sized pieces, like you are feeding the birds
With a potato masher or the bottom of a cup, mash the black beans until the are somewhat broken down.
Combine beans, bread, flour, 1 tsp salt, garlic powder, and paprika, using your freshly washed hands.
Cut the onion to a small dice
Cut the pepper into an equal sized dice
Heat olive oil over medium heat, and cook the onion and pepper with ½ tsp salt until softened, about 5 minutes.
Combine onion/pepper mixture with bean mixture. Mix with clean hands to combine. Form 10 patties, and spread out on baking sheet.
Bake for 20 minutes.
Serve wrapped in a romaine lettuce leaf, with a slice of tomato on top.
