Black Bean Burgers

Makes 10 (will freeze well for 1 month)

You will need:

  • Large baking sheet

  • Strainer

  • Large mixing bowl

  • Potato masher, glass, or mug

  • Measuring spoons

  • Cutting board and knife

  • Sauté pan


  • 29 oz. canned black beans (or 2, 15 oz. cans)

  • 4 slices whole wheat bread

  • ¾ cups all purpose flour (regular or whole wheat)

  • 1 ½ tsp salt, divided

  • 1 tbs garlic powder (or 3 tbs minced garlic)

  • 2 tsp smoked paprika

  • 1 yellow onion

  • 1 red, yellow or orange bell pepper

  • 2 tsp oil plus more for greasing the pan

  • 10 whole romaine lettuce leaves and 2 fresh tomatoes


  1. Preheat oven to 375° F.

  2. Foil a baking sheet and spray or wipe with oil

  3. Strain and rinse the black beans

  4. Tear the bread into bite sized pieces, like you are feeding the birds

  5. With a potato masher or the bottom of a cup, mash the black beans until the are somewhat broken down.

  6. Combine beans, bread, flour, 1 tsp salt, garlic powder, and paprika, using your freshly washed hands.

  7. Cut the onion to a small dice

  8. Cut the pepper into an equal sized dice

  9. Heat olive oil over medium heat, and cook the onion and pepper with ½ tsp salt until softened, about 5 minutes.

  10. Combine onion/pepper mixture with bean mixture. Mix with clean hands to combine. Form 10 patties, and spread out on baking sheet.

  11. Bake for 20 minutes.

  12. Serve wrapped in a romaine lettuce leaf, with a slice of tomato on top.
